Sweet cooked krafi: Traditional Istrian ravioli

Krafi is a traditional dish from the surrounding area of Labin and is made from very simple ingredients - flour, fat, eggs and cheese.

krafi Preparation:
Knead the dough and let it rest for 15 to 20 minutes on the board covered by a cloth. During that time, prepare the cheese filling: beat the eggs with sugar, add cheese, melted butter, dry grapes soaked in rum, grated lemon, stir well and add breadcrumbs if needed in case the filling is too greasy.

Roll out the dough to a thickness of 2-3 mm, shape filling balls with a spoon and  place it on top of the dough so as to leave some space between, cover the dough and cut crescent shapes by using a glass or a cutter. Press the edges with a fork to prevent their opening while cooking.

Cook the krafi in salty boiling water for 7 to 10 minutes, drain them and place on  the plate. Sprinkle grated cow’s milk cheese on top.

Recipe for 30 pieces:
Dough: 300 g flour, 2 eggs, 8 g salt, 0.2 dl oil
Filling: 350 g grated cow’s milk cheese, 80 g curd, 3 eggs, 150 g sugar, 80 g dry grapes, 0.5 dl rum, breadcrumbs, 1 vanilla sugar, 1/2 grated lemon peel
