As always this farm aims at quality, as shown by the extraordinary product proposed to our panel. The farm Capo was founded in 2009 in Brtonigla and consists of a small specialized olive grove of nearly 3 hectares with 550 trees. In the last harvest little more than 45 quintals of olives were produced, equal to a yield of about 6 hectolitres of extra virgin olive oil. We recommend the excellent farm selection, the Extra Virgin Capo - Selekcija from Organic Farming, which is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is definite and ample, rich in elegant vegetal hints of artichoke, wild thistle and lettuce, together with distinct vegetal notes of mint, sage and rosemary. Its taste is rotund and strong, with a flavour of country vegetables, black pepper and a distinct almond finish. Bitterness is powerful and pungency is definite and harmonic. It would be ideal on porcini mushroom appetizers, bruschette with tomatoes, tuna carpaccio, marinated chicken, artichoke soups, pasta with meat sauce, boiled octopus, pan-seared game birds or animals, aged cheese.
