Another excellent performance for Činić, a beautiful oil farm situated in Buje, an historical town in the north of the Istrian peninsula. Founded in 1996 and still run by Nino Činić, the farm has over 2 hectares of specialized olive grove with 750 trees of typical local varieties. In the last harvest 50 quintals of olives were produced, which, once crushed, yielded 10 hectolitres of extra virgin olive oil. We recommend the really good farm selection, the Extra Virgin Oleum Vitae from Organic Farming, which is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is elegant and ample, with vegetal hints of artichoke and lettuce, enriched by notes of black pepper and almond. Its taste is rotund and fine, with a flavour of chicory and officinal herbs, especially mint and rosemary. Bitterness is distinct and pungency is present and harmonic. It would be ideal on bruschette with tomatoes, grilled porcini mushrooms, tuna salads, tomatoes au gratin, artichoke purée, pasta with meat sauce, pan-seared swordfish, stewed poultry or pork, medium mature cheese.
