Another brilliant performance for Klaudio and Irene Ipša. They run a small holiday farm in the green Oprtalj and also devote themselves passionately to extra virgin olive oil production. There are 14 hectares of specialized olive surface with 3,500 trees, which produced 280 quintals of olives in the last harvest, equal to 35 hectolitres of oil. There are two Monocultivar Extra Virgin Ipša, Frantoio and especially the excellent Istarska Bjelica, which we recommend. It is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is definite and complex, rich in vegetal hints of artichoke, wild thistle and chicory, enriched by notes of officinal herbs, especially mint and rosemary. Its taste is rotund and elegant, with a flavour of lettuce and a distinct note of black pepper, almond and fresh walnut. Bitterness and pungency are distinct and harmonic. It would be ideal on porcini mushroom appetizers, tuna carpaccio, artichoke salads, baked radicchio, lentil purée, pasta with meat sauce, baked blue fish, roast game birds or animals, hard mature cheese.
