A brilliant debut for the farm Peteh - Monte Cavalle, situated in the district of Rovinj and founded in 2005 by Vesna Peteh. The estate consists of a specialized surface of about 13 hectares with 2,400 trees of autochthonous local varieties. In the last harvest 58 quintals of olives were produced, which, once crushed, allowed a yield of about 7 hectolitres of oil. There are two Extra Virgin Monte Cavalle, the "basic" and the Monovarietal Buža from Organic Farming, which we recommend. It is an intense limpid golden yellow colour with light green hues. Its aroma is elegant and definite, rich in hints of unripe tomato, together with distinct fragrant notes of basil and field balm. Its taste is distinctly vegetal, with a flavour of artichoke, chicory, lettuce and a distinct note of black pepper. Bitterness and pungency are present and harmonic, with a sweet almond finish. It would be ideal on bruschette with tomatoes, artichoke salads, marinated octopus, lentil purée, pasta with porcini mushrooms, grilled swordfish, pan-seared lamb, barbecued pork, medium mature cheese.
