Present again in this Guide, the farm Vižintin is situated in the territory of Buje. Since 1995 the family Vižintin has been running the estate, which now consists of 5 hectares of olive grove with 1,300 trees. In the last harvest 50 quintals of olives were produced, which, once crushed, allowed a yield of 8 hectolitres of extra virgin olive oil. We recommend the selection proposed to the panel, the Extra Virgin Pove. It is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is fine and delicate, endowed with vegetal hints of celery and lettuce, together with fruity notes of unripe tomato, banana and white apple. Its taste is mellow and harmonic, characterized by a flavour of country vegetables and a note of officinal herbs, especially basil and parsley. Bitterness is present and pungency is limited, with a sweet almond finish. It would be ideal on mayonnaise, barley appetizers, boiled spiny lobster, perch carpaccio, rice salads, potato soup, pasta with shellfish, fried vegetables, sea bream tartare, soft fresh cheese, yeast-raised cakes.
