"Ravalico is an interesting family farm founded over ten years ago, in 1996, by Antonio, Bruno, Gianni and Roberto Ravalico in Nova Vas, a small village situated near Poreč, in the heart of the Istrian peninsula. The specialized olive grove covers 2 hectares with 1,000 trees, which produced 130 quintals of olives in the last harvest, with a yield of about 14 hectolitres of extra virgin olive oil. The Extra Virgin F. & F. Ravalico is a beautiful intense limpid golden yellow colour with green hues. Its aroma is fine and rotund, endowed with ample spicy notes of black pepper, mint and rosemary, enriched by vegetal hints of artichoke, chicory and lettuce. Its taste is complex and strong, with a distinct fruity flavour of ripe white apple and an almond finish. Bitterness is present, pungency is limited and sweetness is evident. It would be ideal on bean starters, bruschette with vegetables, salmon carpaccio, marinated amber-fish, emmer soups, rice with mussels, roast turbot, barbecued cuttlefish, baked poultry or white meat, pasta filata fresh cheese."
