The brand Šibiba is the result of a successful 5-year experimentation on some varieties and the location of the olive grove, where once muscatel grape was grown. The first attempts date back to 2004 in the favourable area of Vodnjan, where olive growing has an ancient tradition. Today there are 1,300 trees, not entirely productive, on 5 hectares of specialized olive grove. In the last harvest 36 quintals of olives were produced, equal to a yield of almost 5 hectolitres of oil. We recommend the excellent Extra Virgin Šibiba - Classic from Organic Farming. It is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and rotund, with rich hints of artichoke and chicory, together with intense fragrant notes of mint and sage. Its taste is elegant and ample, with a vegetal flavour of lettuce and a definite almond finish. Bitterness is distinct and pungency is present. It would be ideal on porcini mushroom appetizers, bruschette with tomatoes, octopus carpaccio, baked radicchio, artichoke purée, pasta with sausages, grilled tuna, barbecued lamb, red meat tartare, aged cheese.
