Another good result for the farm Mahne in Kaštelir, a small town situated in western Istria, not far from the more popular holiday resort of Poreč. This beautiful oil farm was founded in 1999 by Paolo Mahne, who still runs it. There are over 6 hectares of specialized olive grove with 1,600 trees of typical varieties. In the last harvest 100 quintals of olives were produced, with a yield of about 12 hectolitres of oil. The Monocultivar Extra Virgin S. Domenica - Frantoio is a beautiful intense limpid golden yellow colour with warm green hues. Its aroma is fine and delicate, endowed with vegetal hints of lettuce and chicory, a spicy note of black pepper and a sweet almond finish. Its taste is mellow and harmonic, characterized by notes of officinal herbs, especially mint and rosemary. Bitterness is present and pungency is limited and complimentary. It would be ideal on bean appetizers, salmon carpaccio, chicken salads, marinated vegetables, chanterelle mushroom purée, pasta with tomato sauce, stewed shellfish, roast turbot, baked poultry or lamb, goat cheese.
