The family Babić always proposes interesting products and once again deserves to be mentioned in this Guide. It is a family-run farm situated in Novigrad, a charming town of Roman origin in the north of Istria. The family owns an estate of 12 hectares of specialized olive grove with 1,700 trees and an advanced extraction system. In the last harvest 75 quintals of olives were produced and 10 purchased, with a yield of about 11 hectolitres of extra virgin olive oil. There are two Extra Virgin Babić, Leccino and especially the excellent Istarska Bjelica. It is an intense limpid golden yellow colour with light green hues. Its aroma is definite and rotund, rich in vegetal hints of artichoke, chicory and wild thistle, together with distinct aromatic notes of mint and rosemary. Its taste is elegant and ample, with a flavour of lettuce, black pepper and almond. Bitterness is distinct and pungency is present. It would be ideal on bluefish appetizers, porcini mushroom salads, marinated octopus, tomatoes au gratin, artichoke purée, pasta with meat sauce, barbecued swordfish, grilled lamb, pan-seared pork, medium mature cheese.
