"Cerlon in Vodnjan, in south-western Istria, is a young family-run oil farm. Since 2002 it has been run by its founder and principal Giorgio Cerlon, who manages almost 3 hectares of specialized olive grove with 500 trees of the variety buža. In the last harvest 55 quintals of olives were produced, which allowed a yield of 8 hectolitres of extra virgin olive oil. We recommend the farm selection, the Extra Virgin Galeo, which is an intense limpid golden yellow colour with light green hues. Its aroma is ample and elegant, endowed with fruity hints of unripe tomato and sweet almond, enriched by aromatic notes of basil, parsley and white pepper. Its taste is complex and rotund, characterized by a vegetal flavour of lettuce, celery and artichoke. Bitterness is distinct and pungency is balanced. It would be ideal on lentil starters, bruschette with tomatoes, artichoke salads, marinated bluefish, minestroni with vegetables, first courses with sausages, boiled octopus, stewed lamb, barbecued chicken, medium mature cheese."
