A good first appearance in this Guide for the farm Škabe, situated in Pula, known as the ancient main city of Istria. For about 10 years the family Radešić has been running 2 hectares of specialized olive grove with 600 tres of the autochthonous variey buža. In the last oil harvest they produced 60 quintals of olives, which allowed a yield of over 6 hectolitres of extra virgin olive oil. The selection proposed to our panel is the Extra Virgin Škabe - Buža, which is an intense limpid golden yellow colour with slight light green hues. Its aroma is elegant and ample, characterized by fruity hints of unripe tomato and white apple, together with notes of aromatic herbs, especially basil and parsley. Its taste is mellow and vegetal, with a flavour of fresh country vegetables, celery and lettuce. Bitterness is present and pungency is distinct and harmonic. It would be ideal on mussel appetizers, farro salads, marinated salmon, grilled potatoes, asparagus purée, risotto with chanterelle mushrooms, barbecued rock-fish, baked poultry or lamb, mozzarella cheese.
