We welcome the first appearance in our Guide of this farm situated in Novigrad. For almost 20 years Franko Červar has been running an estate consisting of 7 hectares of specialized olive grove with 1,900 trees of a wide range of varieties. In the last harvest 80 quintals of olives were produced, which, once crushed, allowed to yield 10 hectolitres of extra virgin olive oil. We recommend the selection proposed to our panel, the excellent Extra Virgin Červar, which is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is elegant and ample, characterized by vegetal notes of artichoke and chicory, enriched by hints of officinal herbs, especially mint and sage. Its taste is full and rotund, with a flavour of lettuce, black pepper and almond. Bitterness and pungency are present and harmonic. It would be ideal on bean appetizers, salmon carpaccio, chicken salads, marinated vegetables, barley soups, risotto with mussels, stewed shellfish, baked turbot, roast rabbit, grilled poultry, mozzarella cheese.
