Olive oil producers

Uljara Vodnjan

Vodnjan-Dignano

Details:

Uljara Vodnjan is a wine and oil farm founded in the 60s. Today it is run by Kristijan Floričić, who manages 45 hectares of olive grove with 12,000 trees within a large estate of 180 hectares. In the last harvest 2,000 quintals of olives were produced, which, once crushed in the modern oil mill, yielded 120 hectolitres of oil.

There are two Extra Virgin selections, Punta Cissana and the Monovarietal Salvela - Buža Pdo Istra, recommended by Flos Olei. It is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is ample and rotund, endowed with fruity hints of unripe tomato, white apple and banana, together with aromatic notes of basil, mint and parsley. Its taste is exuberant and strong, with a vegetal flavour of broad beans, lettuce and celery. Bitterness is definite and pungency is distinct and well balanced.
