The farm Tonin, active since 2005 in the favourable district of Vodnjan, confirms its splendid position in the Flos Olei guide. It is run by Antonio Pastrovicchio, who carries on his family tradition with dedication and competence. The estate consists of 6 hectares of olive grove with 1,500 trees. In the last harvest (2021) 55 quintals of olives were produced, which, once crushed in the modern oil mill, yielded little more than 9 hectolitres of oil.
Flos Olei recommends the very good Monovarietal Extra Virgin Tonin - Buža, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is clean and rotund, rich in fruity hints of medium ripe tomato, white apple and banana, together with fragrant notes of basil, mint and parsley. Its taste is complex and fine, with a vegetal flavour of broad beans, lettuce and celery and an almond finish. Bitterness is definite and pungency is distinct and harmonic.
