Gault Millau, the world famous restaurant guide, was founded as early as 1965 by two restaurant critics, Henri Gault and Christian Millau. Each year restaurateurs and gourmets alike breathlessly await the annual publication to see which restaurants have been listed in the new edition, which have received better ratings and which have been awarded a toque more than last year. Many Istrian restaurants are listed among the best of the best, and being included in the guide is indeed an excellent recommendation. So much so that often there just aren’t enough tables in awarded restaurants to meet demand.

As far as the Gault Millau restaurant guide is concerned, the type of cuisine is irrelevant – it can be traditional, or it can be modern, vegetarian, Chinese, Japanese, Mexican, Italian... The only thing that matters in receiving high ratings is the quality of the food and a willingness to take that extra step year after year. Experienced restaurant inspectors rate the ways in which, and extent to which, fresh, local and seasonal foodstuffs are used. They check whether each meal is freshly prepared; they go as far as to see how long the ingredients of a dish retain their original taste and aroma after preparation. The way a dish is presented is also important. And so is the menu.  Is it creative enough? Is it informative and easy to understand? On top of everything, the price-service ratio is of the utmost importance.

The Gault Millau Guide provides its readers with descriptions of restaurants, their locations and history. It describes the service you can expect to receive from the moment you enter a restaurant and lets you know how the restaurant treats its guests. Special emphasis is placed on wine cellars and the wine list, as well as the serving temperature of wine.
