We have known it for many years and we have seen it become a modern, technological and sustainable olive growing centre, therefore it deserves to be the Green Farm. Congratulations to the brothers Sandi and Tedi Chiavalon, who carry on a family tradition, combining competence with passion and enthusiasm. The olive grove covers 40 hectares with 15,000 trees. In the last harvest 1,950 quintals of olives were produced and 1,800 purchased, with a yield of almost 470 hectolitres of oil.

There are two very good Extra Virgin selections Chiavalon from Organic Farming, the Pdo Istra and the “basic”, which is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and rotund, rich in fragrant hints of basil, mint and parsley, together with notes of medium ripe tomato, white apple and banana. Its taste is robust and complex, with a vegetal flavour of lettuce, celery and broad beans. Bitterness is powerful and pungency is distinct.
