Present again in our Guide with a result showing its progress, Ursaria is a family-run farm managed by Franko Radovčić in the district of Vrsar, from which it takes its name. It is active in the cultivation of figs, persimmons, jujubes and aromatic plants, besides of course olive trees. The olive area is open to the sea and covers 22 hectares with 5,000 trees, some of which century-old. In the last harvest 250 quintals of olives and almost 35 hectolitres of oil were produced.

There are two Extra Virgin Ursaria from Organic Farming, the Monocultivar Rošinjola and Istarska Bjelica, which we recommend. It is an intense limpid golden yellow colour with slight green hues. Its aroma is ample and rotund, rich in vegetal hints of artichoke and chicory and fragrant notes of mint and rosemary. Its taste is fine and complex, with a flavour of lettuce, black pepper and a strong almond finish. Bitterness is definite and pungency is distinct and well balanced.
