The Fiore family winery, located in the Sarbarica settlement near Umag, is named after its founder, Fiorenco Paulić. For many years, Fiorenco worked for the former PIK Umag wine company before taking over part of its vineyards in 1996 and dedicating himself to viticulture and grape growing. He was soon joined by his son Andrea, who, after completing agricultural high school in Poreč, went on to study Viticulture and Oenology in Udine, Italy.
Following his graduation in 2013, a new chapter began with the establishment of Fiore Winery. At the same time, the family opened a modern winery complete with a stylish tasting room managed by Lili, Andrea's mother, making Fiore a true family enterprise. Today, the winery cultivates 23 hectares of vineyards and produces nine wine labels. Alongside winemaking, the family also tends a small olive grove, continuing the agricultural traditions that have long characterised this part of Istria.
The vineyards are spread across the Šeget and Makale micro-locations, where deep Istrian red soil gives the wines their distinctive character. Some of the vines are more than 40 years old, while the rest are younger plantings established according to modern viticultural standards. Malvazija istarska is the dominant variety, accounting for more than 70 per cent of the vineyard area. Annual production amounts to around 80,000 litres of wine, with half bottled under the Fiore label and the rest is sold in bulk.
