Olive oil producers




We welcome the first appearance in our Guide of this oil farm situated in Vodnjan. Founded in 1990, it is run by Elio and Armando Giachin and today includes a specialized olive grove of 15 hectares with 4,000 trees. In the last harvest 200 quintals of olives were produced, equal to a yield of about 16 hectolitres of extra virgin olive oil. The promising selection proposed by the farm, the Extra Virgin Giachin, is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is ample and elegant, rich in fruity hints of unripe tomato, white apple and a note of freshly mown grass. Its taste is complex and rotund, characterized by vegetal notes of artichoke and celery, together with an aromatic flavour of basil and field balm. Bitterness and pungency are distinct and harmonic, with evident sweetness. It would be ideal on salmon carpaccio, boiled beans, marinated vegetables, baked potatoes, barley soups, risotto with ovoli mushrooms, stewed shellfish, roast fish, baked rabbit, grilled poultry, mozzarella cheese.
