Another excellent performance for the young oil farm founded in 2006 by Emanuel Grubić in Bale, a typical Istrian village built on a hill, with narrow streets and stone houses. It has 8 hectares of specialized olive grove with 1,700 trees. In the last harvest 150 quintals of olives were produced, equal to a yield of over 16 hectolitres of extra virgin olive oil. This year our panel recommends again the excellent Monocultivar Extra Virgin selection Valeo - Buža, which is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and rotund, rich in hints of chicory and lettuce, together with notes of aromatic herbs, especially mint and basil. Its taste is complex and fine, characterized by hints of medium ripe tomato, banana and a vegetal note of celery and broad beans. Bitterness is distinct and pungency is present and harmonic. It would be ideal on tuna carpaccio, baked porcini mushrooms, octopus salads, grilled radicchio, minestrone with vegetables, pasta with meat sauce, blue fish au gratin, barbecued red meat or game, hard mature cheese.
