Oliveri is the trademark the farm Paulišić uses to bottle and market its extra virgin olive oil produced in the area of Kaštelir, a little town in the north-eastern part of the region of Poreč. Founded in 2000 by Dario, today the farm is run by Ivana Paulišić and consists of 7 hectares of specialized olive grove with 2,070 trees of a wide range of local and imported cultivars. In the last harvest almost 275 quintals of olives were produced, with a yield of about 35 hectolitres of oil.

The selection proposed to the panel is the excellent Monovarietal Extra Virgin Oliveri - Coratina, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is clean and rotund, endowed with ample vegetal hints of artichoke, chicory and lettuce. Its taste is exuberant and strong, with aromatic notes of mint and rosemary and a strong finish of almond and black pepper. Bitterness is definite and pungency is distinct and well balanced.
