Pincin - Monticello confirms its brilliant results, proposing another interesting product to our panel. The farm is situated in Završje, in the district of Grožnjan, and since 2000 has been run by Edo Pincin. It consists of 2 hectares of olive grove with 600 trees. In the last harvest 50 quintals of olives were produced, which allowed to yield 6 hectolitres of extra virgin olive oil. We recommend the excellent Extra Virgin selection Monticello, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is rotund and fine, rich in vegetal hints of artichoke and wild chicory, together with ample fragrant notes of mint, rosemary and sage. Its taste is definite and complex, characterized by a flavour of lettuce, almond and black pepper. Bitterness is definite and pungency is distinct and harmonic. It would be ideal on porcini mushroom appetizers, bruschette with tomatoes, spinach salads, barbecued radicchio, lentil purée, pasta with meat sauce, blue fish au gratin, grilled red meat or game, hard mature cheese.
