Oliveri is the trademark the farm Paulišić uses to market its extra virgin olive oil produced in the area of Kaštelir, a little town situated in the north-eastern part of the region of Poreč. Founded in 2000 by Dario Paulišić, the farm consists today of 5 hectares of specialized olive grove with 1,500 trees of both local and imported varieties. In the last oil harvest 300 quintals of olives were produced, with a yield of almost 46 hectolitres of extra virgin olive oil. We recommend the selection proposed to our panel, the Extra Virgin Sangreal. It is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and rotund, with ample vegetal hints of artichoke, wild chicory and lettuce, enriched by fragrant notes of mint and rosemary. Its taste is full and complex, with elegant spicy hints of black pepper and a distinct sweet almond finish. Bitterness and pungency are distinct and harmonic. It would be ideal on farro appetizers, steamed beans, tomato salads, baked potatoes, chanterelle mushroom purée, pasta with asparagus, stewed shrimps, pan-seared turbot, baked rabbit, grilled poultry, goat cheese.
