Another good result for Stipančić in Cornialosa, a small village in the district of Pula. Since 2005 this beautiful farm has been run by Lorena Stipančić, who has a specialized olive grove of 6 hectares with 1,250 trees. In the last harvest 30 quintals of olives produced 4 hectolitres of extra virgin olive oil. There is only one, but excellent selection, the Extra Virgin Cornialosa from Organic Farming, which is an intense limpid golden yellow colour with slight green hues. Its aroma is clean and rotund, with elegant hints of freshly mown grass, together with distinct fragrant notes of mint, rosemary and sage. Its taste is full and complex, endowed with ample vegetal hints of artichoke, chicory, lettuce and a note of black pepper and almond. Bitterness is definite and pungency is present. It would be ideal on grilled porcini mushrooms, marinated chicken, tomatoes au gratin, roast radicchio, artichoke purée, pasta with meat sauce, baked blue fish, stewed poultry or lamb, medium mature cheese.
