The farm Tonin, active since 2005 in the favourable district of Vodnjan, in spite of a slight decrease, confirms its position in our Guide, where it has been present for almost twenty years. It is run by Antonio Pastrovicchio, who carries on his family tradition with dedication and competence. The estate consists of 6 hectares of olive grove with 1,200 trees. In the last harvest 110 quintals of olives were produced, which, once crushed in the modern oil mill, yielded about 16 hectolitres of oil.

We recommend the selection proposed to our panel, the Monovarietal Extra Virgin Tonin - Buža, which is a beautiful intense limpid golden yellow colour with light green hues. Its aroma is clean and rotund, endowed with fruity hints of unripe tomato, white apple and banana and fragrant notes of basil, mint and parsley. Its taste is complex and fine, with a vegetal flavour of country lettuce and celery. Bitterness is definite and pungency is distinct and harmonic.
