Ursaria is a family run farm managed by Daniela and Franko Radovčić, situated in the area of Vrsar. Actually, Ursaria is an old version of the town’s name. The farm is active in the cultivation of figs, persimmons, jujubes and aromatic plants, besides of course olive trees. The olive surface is open to the sea and covers 22 hectares with 5,000 trees, some of which century-old. In the last harvest 40 quintals of olives and about 7 hectolitres of oil were produced.
There are two Extra Virgin Ursaria from Organic Farming, Oleum Lemmense and the Monocultivar Ursaria - Leccino, recommended by Flos Olei. It is an intense limpid golden yellow colour with slight green hues. Its aroma is ample and rotund, rich in vegetal hints of artichoke and chicory, together with fragrant notes of mint and rosemary. Its taste is fine and harmonic, with a flavour of lettuce, black pepper and a strong almond finish. Bitterness is distinct and pungency is present and well balanced.
