Present again in this Guide, Dobravac in Rovinj is a beautiful farm founded by Damir Dobravac in 1960, following the familiar agricultural tradition, which originally consisted in the production of fruit and vegetables, then it also included a vineyard, an olive grove and tourist accomodation. Today he runs 3 hectares of olive surface with 900 trees. In the last harvest 75 quintals of olives were produced, equal to a yield of over 7 hectolitres of oil. The Extra Virgin OL is a beautiful intense limpid golden yellow colour with delicate green hues. Its aroma is ample and rotund, with vegetal hints of artichoke, wild chicory and lettuce, together with notes of freshly mown grass and almond. Its taste is full and complex, with a flavour of officinal herbs, especially mint and rosemary, and a note of black pepper. Bitterness is present and pungency is limited, with evident sweetness. It would be ideal on bruschette with tomatoes, swordfish carpaccio, porcini mushroom salads, pinzimonio, asparagus soups, pasta with meat sauce, blue fish au gratin, roast red meat or game, hard mature cheese.
