JAZ by Ana Roš Brings the Celebrated Chef’s Concept to Istria

The new Istrian restaurant by Ana Roš, named the world’s best female chef and holder of three Michelin stars, offers high gastronomy in a relaxed and welcoming atmosphere

Ana Roš’s restaurant Hiša Franko in Soča, Slovenia, holds three Michelin stars, while JAZ was created as a refined version of a restaurant where enjoying food becomes simple and natural - whether for breakfast, lunch, or dinner.

She created JAZ as a young dining concept that pairs top-quality ingredients with a menu designed around the rhythm of the day and the seasons. In a space where high gastronomy meets a relaxed, welcoming atmosphere, guests can enjoy dishes inspired by global flavours, crafted from fresh market ingredients, with an emphasis on sharing and communal enjoyment.

The first JAZ opened in Ljubljana in 2023, and its success, along with overwhelmingly positive guest feedback, led to the opening of JAZ by Ana Roš in Poreč, in partnership with the hotel company Valamar.

“JAZ isn’t a concept that follows the rules of fine dining,” Ana explains. “JAZ is my living room - a place where great food, fantastic cocktails, and the best people come together, without rules. It’s a little funky, a little rock ’n’ roll -a place where you settle in and don’t want to leave. From the mountains of the Soča Valley, you can see Istria. But for me, it’s not just a view, it’s a feeling of coming home, because I spent so much time here as a child. Istria has always been part of my kitchen and part of me.”

JAZ in Poreč holds a special place in Ana Roš’s personal and professional journey. “JAZ by Ana Roš is envisioned as a space without rigid rules - a place where people come together for food, conversation, and a sense of community. Istria has been part of my culinary language from the very beginning, and I see JAZ Poreč as a natural continuation of that story, a meeting of sea and land, tradition and modernity, a restaurant that is at once lively, relaxed, and serious about its craft,” said the legendary chef on the occasion of opening her new restaurant in Istria.

Nestled in the heart of the old town, within the elegant Jadran Heritage boutique hotel by the sea, JAZ by Ana Roš is a vibrant space that follows the city’s daily rhythm, welcoming both visitors to Istria and the local community - a new gathering place on the bustling Poreč waterfront.

The menu highlights ingredients from Istrian farmers and local producers, long supported by this multiple-award-winning chef, forging connections between land and sea, Slovenia and Croatia, tradition and creativity. Guests are invited to experience innovative dishes that combine Istria’s seasonal bounty with the bold culinary imagination of Ana Roš.
