A guide to the world of extra virgin olive oil

O. Rossi is a brand known to the connoisseurs of Istrian wine, but the farm, founded by Luka and Marino Rossi in the late 90s, is also active in the production of quality extra virgin olive oil. There is still a long way to go, but the premises are encouraging. The olive surface covers little more than 2 hectares with 1,000 trees. In the last harvest 70 quintals of olives were produced, with a yield of 8 hectolitres of extra virgin olive oil.
We recommend the Extra Virgin Rossi - Family Selection, which is an intense limpid golden yellow colour with slight green hues. Its aroma is fine and delicate, endowed with vegetal hints of artichoke and chicory, together with notes of officinal herbs, especially mint and rosemary. Its taste is mellow and harmonic, with a flavour of lettuce and an almond finish. Bitterness is distinct and pungency is present and well balanced.
