Olive oil producers




It has been known for many years, becoming a real olive growing centre today, with a new oil mill, warehouse, tasting room and sales point in Vodnjan. Congratulations to the brothers Sandi and Tedi Chiavalon, who carry on a family tradition, combining competence with passion and enthusiasm. The olive grove covers 32 hectares with 9,200 trees. In the last harvest 800 quintals of olives were produced and 800 purchased, with a yield of almost 225 hectolitres of oil.  

There are two very good Extra Virgin Chiavalon from Organic Farming: Istra and the “basic”, Organic recommended by Flos Olei. It is an intense limpid golden yellow colour with slight green hues. Its aroma is ample and rotund, rich in fragrant hints of mint and rosemary, together with vegetal notes of artichoke and chicory. Its taste is exuberant and complex, with a flavour of lettuce, black pepper and a strong almond finish. Bitterness is definite and pungency is distinct.
