Present again in our Guide with a result showing its progress, the farm Valencano, situated in the favourable district of Bale, was founded in 2006 by Mario Paunović and is currently run by two new owners, Cornelia and Jörg. Today the estate consists of over 3 hectares of specialized olive surface with 1,160 trees of a wide range of cultivars. In the last harvest about 40 quintals of olives were produced, equal to a yield of almost 8 hectolitres of oil.

There are three Extra Virgin selections Valencano from Organic Farming, the Monocultivar Istarska Bjelica, Leccino and Buža, which is an intense limpid golden yellow colour with light green hues. Its aroma is clean and rotund, with fruity hints of medium ripe tomato, white apple and banana, together with aromatic notes of basil, mint and parsley. Its taste is fine and vegetal, enriched with a flavour of broad beans, lettuce and celery. Bitterness is definite and pungency is distinct.
